I'm working on a project where I need to convert from pixels to mm and need to find the aperture or sensor size on the FaceTime HD Camera. Specifically, I have the mid-2011 27" iMac. I can't seem to find any detailed technical specifications on the newer FaceTime camera. Anyone privy to these details?

I think it's 1280x1024, as that's what the LED backlit MacBook Pro's and onwards used. The Lion version of Photo Booth uses the max resolution and crops it.
720x480 is actually a standard resolution - it's what most DVD's use.
So, if I understand correctly, you did these steps:
- Upgraded to 10.8.5
- Found the camera didn't work in Skype
- Backed up /Library/CoreMediaIO/Plug-Ins/DAL/AppleCamera.plugin
- Put AppleCamera.plugin from 10.8.4 in its place
- Camera worked
- Upgraded to 10.8.5 Supplemental Update
- Camera broken again
The Supplemental Update does include a copy of AppleCamera.plugin (see below), so one quick thing to try:
- Put your copy of AppleCamera.plugin from step (3) back into place
- Download the 10.8.5 Supplemental Update again. You can get it as a DMG file from Apple DL1686
- Re-run that update (double click the
.pkgfile in the DMG)
By the way, you can see what files are contained within the update: double click the .pkg file, then choose File > Show Files from the installer.

tl;dr - As a starting off point, eyeballing it I'd estimate around ƒ/2.2 - ƒ/2.8 aperture.
This isn't an exact answer, I put the iPhone 7+ front camera (which has a ƒ/2.2 aperture and a 'focal length in 35mm' of 32mm) next to the 720p FaceTime HD camera on a macbook. Eyeballing it, the image on the mac seems to be the same or maybe ~5% smaller in FOV. So I estimate around ƒ/2.2 - ƒ/2.8 , maybe ƒ/2.4 in aperture.
