Every time I connect my bluetooth headset to my Mac, iTunes decides it's time to launch. Is there a way I can prevent this behavior?

Even after removing iTunes from my computer, it stills prompts me to "find iTunes" whenever a bluetooth audio device is connected.
The best step to isolating your issue would be to collect some data about the bluetooth environment where you are using your mac. Radio waves come and go with other devices, new phones, degrading antennas and changes in bluetooth firmware.
The Bluetooth Explorer is the best tool I have found to troubleshoot bluetooth hardware and data. It's free as part of Xcode from the Mac App Store.
You can debug data issues, see the protocols that connected devices are using, and get to all manner of engineering data relating to bluetooth such as errors, relative signal strength indication (RSSI). It's hard to tell if this will help you, but it lets me know when a microwave or home phone was causing noise issues on several occasions when my hardware was otherwise working properly.
Try installing those bugged apps direct from the App Store, as opposed to relying on the backup package.
Use the backup to get your own content (photos, messages, etc), and ignore the apps. Download them fresh from the app store.

Extending Steve's answer, plus some tips from this apple discussion, here's what I did that finally solved this.
1) Create a "Do Nothing App": open Automator, create an empty application, and save it as DoNothingApp.app
2) Rename iTunes (manually in the Applications directory, or using this terminal command):
sudo mv /Applications/iTunes.app /Applications/iTunesBACK.app3) Make a copy of DoNothingApp.app as iTunes.app (manually, or using this terminal command):
sudo cp -R /Applications/DoNothingApp.app /Applications/iTunes.appThat's it. Of course, your iTunes is now called iTunesBACK.
