Deleting apps from Launchpad and Applications folder are similar but for an extra step. When you delete from Launchpad, MacOS removes it completely from your system.
From Finder(Applications folder), you move it to Trash and have to empty the trash to completely delete the app and generate space out of it.
Those apps which cannot be deleted from LaunchPad (without X) are apps pre-installed by the OS and needed by it or apps that you have installed separately using a DMG file from third party like Google/ Mozilla FF.
Rest apps which can be deleted are apps installed from AppStore.
I tried uninstalling some applications, and files in these folders or the corresponding folders in ~/Library/Containers/ were sometimes deleted and sometimes not:
~/Library/Caches/ (deleted for most applications)
~/Library/Application Support/
Files in these folders weren't deleted for any of the applications I tested with:
For example Kindle books or the database for notes in JustNotes were not deleted.
You can see what files are accessed by uninstalld with sudo opensnoop -n uninstalld and search for support files with mdfind $(osascript -e 'id of app "AppName"'). If you want to uninstall applications more completely, it's probably safe to just delete the whole sandbox containers in ~/Library/Containers/.
Move the application out of the applications folder, restart launchpad (either log out/log in or in terminal write killall Dock). Then move back the application to the applications folder.
