Basically I have a snowboarding helmet that has speakers built into it and has a 3.5mm (female) connection to the speakers.

There's no way to do this via the iPhone itself, but there are voice-controlled Bluetooth headsets (such as the BlueAnt Q2) that would allow you to take the call on the headset without pushing a button.
There is no product that provides a stand and charger with a mic, but there are several external mics you can clip onto the iPhone. Some (lower quality) use the headphone jack, and some (higher quality) use the 30-pin docking port.
