I want to keep my Notes only on my iPhone 6 and not have them appear in my mail account but I have been unable to disable notes without deleting them from my iPhone. I tried to find the On My iPhone option in Notes settings to set the default account but it is not there, nor is it available in Mail, Contacts, and Calendar settings. Please advise.

Each Mail account on your iOS 4+ device is able to sync notes. When you have it enabled for multiple mail accounts you're able to have notes stored in different accounts. The Default Account setting will be for which account the notes are associated with unless you say so otherwise (Identical to the Default mail account in terms of functionality). The screenshot below might help - namely showing the Notes app is like the Mail application - an All Notes (Mail) view and just viewing on the individual accounts.
Unless you manually go to that "All on My iPhone" section and add a contact, contacts would be created by default on the account you're viewing, i.e. Gmail. Just keep the Contacts app viewing only the Gmail contact list and you should be fine.
iOS5 now has a Default Account option under Settings > Mail, Contacts, Calendars > Contacts (section) (Credit to Peter for the update)

If the notes are associated with your email account you'll have to copy them somewhere (you can email them, send them as text, iMessage, copy and paste them but only one by one), delete them —which will happen automatically when you disable them on Settings > Mail, contacts, calendars— and then add them back to reside exclusively on your iPhone. Consider making regular backups of your device, because if anything happens to it, that will be your only way of recovering them.
