I don't think it's the app that's causing the issue. And I believe there are two separate issues with separate causes.
First, the skipping issue could be caused by a corrupt iPhone music DB - this is fixable by re-syncing the iPhone with iTunes.
Second, voice control could kick in automatically if you use some kind of accessory such as headphones. Try not using this accessory for a while and see whether the voice-control issue is sorted.
You need to turn off "Use Cellular Data" in the "Music" section in Settings. Then, when you go to play a song from iTunes Match when you're on 3G, it'll give you a message saying you need to be on Wi-Fi.

This happens frequently to me, but turns out my phone is simply connected to a bluetooth device that I thought was turned off. Try turning off bluetooth just to eliminate this as an issue.
