I have recently got a new iPhone. I would like to transfer all my apps that I have previously downloaded (ie: iFruit, BBM, TU Go from O2, etc).
How do I do so without downloading them all again? …and also I need to transfer all my pictures and videos through iCloud but not apps.
From testing, it seems you can't break that link without having to re-download. Since the change requires you to synchronize the phone, you will need to re-download the files from the phone once you've un-ticked the box, since the synchronize does remove the applications completely.
Unfortunately the answer to your question is right now there isn't a default way, but I suspect it will become possible in future iTunes versions.
I have looked for possible hacks to do this and have yet to find one that doesn't require jail breaking to copy the files back.
When you choose to backup on iCloud you are creating a backup in the cloud, not the MacBook.
You have the choice to Sync to a computer or to iCloud. If you sync to a computer you can also sync over WiFi, which could be the better option for you by the sound of your question.
If you open iTunes, make sure that it is authorised to your account.
Plug your device in.
It will then say. (substitue iPod for iPhone, iPad etc)
Click "Transfer Purchases"
Your device will now transfer all the apps and data to this new computer before it syncs the new data.

you can all you need to do is use iTunes and create a backup of your old iphone, after that's dome plug in the new iPhone and choose the previous iPhone backup (old iPhone) and it should work, I have done this since the iPhone 4 so I'm sure it works. The only thing is it takes a while if you have used a lot of your memory.
