The Apple Watch shows the temperature on the clock face.
When my Apple Watch is disconnected from my iPhone, the temperature display becomes disabled, but the time is still displayed. That leads me to think the watch doesn't have a temperature sensor, but it getting it from the Internet.
My question is: How does the Watch get the temperature?
I was experiencing this problem when i had my phone on my desk and I would walk away from it. When I came back I found that the watch would refuse to re-pair with my phone again.
I found a quick way to force the watch to re-pair with my phone:
In watchOS 3.2, Apple added Theater Mode, accessed by swiping up from the Watch Face and tapping the bottom-left icon.
Theater Mode silences the WATCH and prevents the screen from lighting up on wrist-raise or when receiving notifications. Taptic feedback will still be triggered.
You can combine Theater Mode and Do Not Disturb to silence Taptic feedback, as well. Alarms will still ring as normal.

The temperature shown does come from the Weather App. Small bits of data on the watch face are known as complications.
Tapping the temperature on the watch face will open the Weather app thus revealing the source of the data. The watch gets the data from your iPhone which, in turn, uses location and data from the Internet. You may find more useful information in the Apple Watch User Guide.
