I am wondering if it is possible to specify which of my contacts will see if I have read their messages. I know I can turn on "send read receipts" in iMessage but that allows everyone to see if I have read their messages. I would really like it if there was some way to just have certain of my friends see that I have read their messages.

The functionality is for messages to get delivered via SMS if that is enabled and iMessage is disabled or not available for the sender.
iMessage should / is designed to receive messages whether or not you are sending back read receipts as long as you and the recipient are on devices that match in Apple's database of recipients that are iMessage capable.
Something else is up - it could be related to the switch (as software corruption can act in weird ways) but it's certainly not the typical behavior.
What you are trying to do is send SMS messages from Messages on your Mac to people without iOS devices, correct? (Just fixed this for my wife this morning.)
Be sure to add your Mac to your iPhone's Text Message Forwarding.
On your iPhone:
- Go to Settings
- Messages then select Text Message Forwarding
- There you will see a list of devices that use your Apple ID for Messages
- Add your MacBook if listed.
- Enter the code displayed on your Mac into the iPhone dialog when prompted.
Now you should be able to text from your Mac using Messages.

I don't believe this is possible at this time. Read receipts in iMessage appears to be an all-on or all-off option only.
