Recently upgraded from iOS 5 to 7, and noticed that if I receive an email containing a curse word, it's replaced with "(BLOCK)". Any way to disable this behavior and et back my F bombs?

Email is not included in the backups according to this apple support page. This probably makes sense as you would normally have a copy on a server whereas with SMS, MMS etc you wouldn't necessarily have a copy on the server. So the answer to where is your email gone is it gets wiped by the backup process.
To get your email back you should be able to just go into your email accounts and click the circular arrow button to refresh or if you're setup for push mail then it should sync automatically. You can take a look in Settings > Mail, Contacts, Calendars for your mail accounts which should still be there. If they're not syncing try turning the mail off and back on in one of the account setting screens.
My workaround has been to add a keyboard shortcut that replaces the text ill with I'll any time I add it. Not perfect, but as a stop-gap it will do.
To add the shortcut go to Settings -> General -> Keyboard and scroll to the bottom of the page. You will see an Add New Shortcut... button. Press it.
In the Shortcut configuration page type I'll in to the Phrase entry box and ill in to the Shortcut entry box and press the Save button.
Now any time you type ill it will auto-correct to I'll.

iOS does not do profanity filtering in incoming emails like your example.
Such filtering will be done elsewhere, either by the sender's mail server or your mail server, before the email gets to your device.
