I saw a few questions asked and suggest Waterproof and a few other apps, but it seems to throttle everything outgoing on my Mac. I want to only throttle the download speed on iTunes. I normally use jDownloader to download things, and I am able to put a speed cap on my downloads, is there a way to do that for iTunes?

you should be able to swipe from left to right along the item to get a delete button. The same way you used to have to delete on the iPhone before they added in multi-item delete.
What application are you interested in exactly?
One workaround could be to make Spotify scrobble to Last.fm (in preferences), and then get the song title from Last.fm. Iirc, there is a plugin for Adium that does this. Caveat: there'll be some delay in the updates when using this method.
