Both (gmail and apple) treat attachments differently.
If you right click the PDF or Word document you should be able to choose from the menu, show as icon.
If you want to permanently show the attachments as icons in Apple Mail, close Apple Mail, open Terminal and issue the following command
defaults write com.apple.mail DisableInlineAttachmentViewing -bool yes
If you want to undo what you just did-
Close Apple Mail, open Terminal, copy and paste the following command
defaults delete com.apple.mail DisableInlineAttachmentViewing
I do not know for the OS X 10.6.8 but on 10.9.5 it works like this
Create new Smart Mailbox
Once it is done finding all emails with attachments
Select all or specific one
Under the Messages tab select "Remove Attachment".

Create a keyboard shortcut for it
System preferences Keyboard - Shortcuts tab
Select App shortcut
Click on (+) sign)
Select Mail in the Application window
Write "Remove Attachments"
Now choose your favorite keyboard combination for it.

In Preferences, within Mail, in the Accounts tab, for each of your accounts there is an Advanced tab. There is an option called Keep copies for offline viewing which is a drop-down box. By Choosing All messages, but omit attachments, you can set it to never cache the attachments.
