I want to export an MS Outlook .pst file to Apple Mail. How can I do this?

Do it via an IMAP server, which you can install on the Mac. I used dovecot, created an account on it, added that account to Outlook and just moved it all over. Then in Mail, I created the same account, and copied everything over.
I prefer this method because it completely preserves all the properties of each message, including attachments. Exporting and importing through another method (including Thunderbird) doesn't preserve everything properly.
Setting Default mail Client tells your system to use that one when requesting email from other applications. (outside of Email).
While in Email (Outlook or Mail) they will do as told.
In your case using MS Office Word, Excel, PowerPoint with email link in one of the documents, will by default use the chosen default mail client.
There is a simple work around.
Since you are probably not using heavy duty MS Office applications to handle your Mail.app but do so with Outlook, I would make the Outlook the default mail application.
Now you can use Mail as email and Outlook will be the default mail client for your work.
It depends on the setup you already have, but I think this should work.
In your mail client (Entourage/ Outlook) setup the IMAP access to your Gmail account.
Setup the folders for sent and trash.
Move all mails from your other inboxes to your Gmail inbox:
Select all folders by clicking the top one under the account to be moved, and then Shift-click the bottom one. After all the folders are selected, drag and then drop them onto your Gmail account in the sidebar. (If there are many folders you may want to consider testing a couple first, before moving all of them).
If the account is large, it will take awhile to upload all the email.
