I can't find any way to edit the tags within the context menu which appears when you double-tap on a file in Finder. Is there a way to choose which ones appear? An example of what I mean is below:

- Inside Fusion, open the Virtual Machine Library window – Window menu > Virtual Machine Library, or press CMD+SHIFT+L.
- Select the VM and click the Settings button.
- Click the Applications icon, and then select the Default Applications tab.
- Uncheck Open your Mac files and web links using Windows applications and close the window.

However, many applications support Stationery Pad documents. These are documents marked as read only and when opened create a new untitled document using the original document's content.

From Finder prefs [Finder menu > Preferences... or Cmd ⌘ , > Tags
You can check which to show in the sidebar in the top section & in the lower section you can drag & drop the set to use on contextual menus. It will replace the tag you drag to with the new one.
