Is there a way to adjust MacBook Pro's Touch Bar brightness?
MacBook Pro, 13", 2016, macOS Sierra 10.12.6

You can't. It may automatically adjust based on external lighting conditions if the "Adjust keyboard brightness in low light" option is on in System Preferences>Keyboard, but I haven't experimented to confirm this.
There is not an option at this point in time.
As an office insider, I recently sent a feature request to them. If you'd like to send a feature request, just click the :) in the top right corner and go from there.
Whilst you can't completely customise the actions provided in the control strip, you can replace or remove buttons with other Apple-provided buttons. Go to System Preferences → Keyboard → Customise Control Strip… and replace the buttons on the Touch Bar with any other options.
