In my app, I have 1 In-App Purchase. In App Analytics, in Metrics:
My Sales and In-App Purchases are different. For so many days, I have one or more In-App Purchase but no Sale.
How is this possible?

Sales should include the revenue from In-App Purchases. From Apple Help, Sales mean, "Sales is the estimated total amount billed to the customers.

Keep in mind that your numbers will not always match the official reports. It all depends on the timing of when credit card transactions complete and money is actually posted, etc.
Most apps with in-app purchases have the ability to redownload those purchases if, for instance, you delete the app & need to reinstall it, or if you are loading the app on another device with the same AppleID. Below, the Restore Purchase button in GarageBand which allows me to download loops I have purchased:

In-app purchases can be made at any later point (as available) after installing the app. Also, for paid apps, downloading results in a sale only upon first time installation by user.
