The majority of the songs I have are individually purchased or downloaded songs, not complete albums.
In the categories "Recently Added" and "Downloaded" iTunes shows under the album artwork the name of the album and the artist. It would be much more helpful, if the name of the song and the artist would be shown.
I cannot find a preference setting for changing this. Is there a way to change the info which is displayed by iTunes?

In many cases, improper tagging causes the files to go weird places. I suggest you create a smart playlist that shows you “new added” stuff:
I usually have the same problem with mp3 with dubious tagging.
I looked around and honestly I didn't find a great method to do this, just a plethora of different items. If you activate your iTunes sidebar, you can actually go to the album in the iTunes store directly when you are playing or selecting that song.
You can also use things like iTunes preview to compare against your iTunes library, for instance The Beatles page has their songs and albums (though they are called top songs and albums) and you can click on any of them to get a track list.
I found I could copy and paste the track list to a spreadsheet application like numbers while preserving the formatting, and could do the same with an iTunes library exported track list (as text), I then sorted by columns and saw the ones I did have against the ones in the albums on iTunes next to each other.
This isn't a great approach, but it seems like it will take significantly less time than manually printing out song lists and the like, sorry I couldn't be of more help.

I can't answer your question fully or strictly within the bounds of you asking it, but I have a workaround that can at least give you what you want in some fashion: smart playlists.
Create a smart playlist (File -> New -> Smart Playlist…) with these settings:
Tweak the time period and number of items to taste.
A smart playlist defaults to Playlist view…
Switch to Songs view: highlight the new playlist, View -> View As… -> Songs.
(note: I took this screenshot with 25 items, not 9999)
…and finally tweak your columns to your liking by right-clicking and choosing your info:
You'll need to sort by Date Added (click the Date Added column to toggle sorting by ascending and descending) after all this to ensure you mimic the Recently Added feature in Library.
It's close, but not an exact match for what you want. The View -> View As… approach is not currently available for the Recently Added option in Library.
