Guides online refer to a text box beneath the image, but I don't see one in Keynote 8. I've filled in the Description, but I can't find any way to make that visible, either. Must I create a text box? I am using my company's presentation template.

Options for making a Gantt chart
Although it is not a graphical tool by design, it is possible, with quite a bit of formatting, to make a Gantt chart in Excel. You can do this by turning your project tables into an Excel Gantt chart using Excel's bar graph functionality. It is also possible and significantly easier to create much more graphical and more manageable Gantt charts in PowerPoint, such as the one above. You can do this by simply pasting your Excel project tables into a PowerPoint add-in called Office Timeline.

This drove me nuts forever! It's actually pretty easy (but a little tedious). Just like you can drag a selected color from the picker to create a default (opened with the picker wheel) color OR create a new palette – once you've selected your color it will appear in the presets as the "current fill". Then, just drag the "current fill" color box onto the default palette color you want to modify.
Here I've already dragged my grayscale and just added light indigo from dragging the current fill box to the color fill box.

The Description field attached to an image is not designed to be visible in your presentation. Instead, the purpose of the Description field is to provide additional information that can be read by assistive software. This allows users of any such software to access your presentation in a meaningful way.
Assistive software is primarily used by people who face challenges (e.g. visual impairment, learning difficulties, etc) so that they're able to access content that would otherwise not be available to them. For example, a description you enter for an image in Keynote can be read out aloud using VoiceOver so that a user with visual impairment is aware of it and understands it.
A text box is totally separate to an image and would need to be added individually. Depending on what you wanted to achieve, you could use a text box, comments or notes. If all you wanted, however, was a caption at the bottom of images then a text box is probably your best bet.
