I know of sites that sell 8GB sets for the MacBook. Apple states that they can have up to 4GB. One of my co-workers got her first gen MacBook to 6GB. Can anyone confirm that 8GB is recognized in last year's MacBook?

The first MacBook to fully support 4GB of RAM (with unofficial support for up to 6GB) was the MacBook (13-inch Late 2007). This was also the first MacBook to feature a 800MHz FSB and the GMA X3100 graphics chip.
I'd be interested to know where you're getting your system specs from, but I'd suspect that somewhere along the line the FSB and RAM speed are getting confused.
Check your system's specification from the System Profiler application found in /Applications/Utilities. Under the Hardware section look at the "Model Identifier".
If you get MacBook3,1 then you're in luck - that's the newer (Late 2007) model with greater RAM support and graphics. Anything prior to that (Macbook2,1 or MacBook1,1) and you're looking at (approx) 3GB limit or even 2GB (for the very first gen model).
Your Macbook Pro supports only 8GB (15'') or 6GB (17'') of RAM.
Apple states that it's 4GB, but OWC continuously check the max. supported RAM.

Yes, it supports up to 8GB of memory. Make sure that memory is 1066 MHz, not 1333, or you'll be unable to boot to MacOS.
If you are unable to find 1066MHz DIMM, you could be able to re-flash the SPD chip of a 1333MHz DIMMs using a technique I described at the Apple Discussion Board. Note that not all 1333MHz chips can be flashed.
